Lemon Truffles are a refreshing sweet treat made with a delightful combination of graham crackers, coconut, and lemon, coated in smooth white chocolate.
Ingredients
- 1 cup crushed graham crackers
- 1 cup powdered sugar
- 1/2 cup unsweetened shredded coconut
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup softened cream cheese
- 1/2 teaspoon vanilla extract
- 1 cup white chocolate chips (for coating)
Instructions
- In a large mixing bowl, combine the crushed graham crackers, powdered sugar, shredded coconut, lemon juice, lemon zest, cream cheese, and vanilla extract. Mix until well combined and a dough forms.
- Refrigerate the mixture for about 30 minutes to firm it up, making it easier to handle.
- Once chilled, use your hands to roll the mixture into small balls, about 1 inch in diameter. Place the truffles on a baking sheet lined with parchment paper.
- In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between until smooth.
- Dip each truffle into the melted white chocolate, allowing any excess to drip off, then return to the parchment-lined baking sheet.
- If desired, sprinkle additional shredded coconut or lemon zest on top of the truffles before the chocolate sets.
- Refrigerate the truffles for at least 30 minutes to allow the chocolate to harden.
Notes
- For a stronger lemon flavor, increase the lemon zest to 2 tablespoons.
- Substitute the white chocolate coating with dark chocolate for a richer taste.
