Ingredients
For the Bread:
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 cup granulated sugar
- ½ cup unsalted butter (melted)
- 2 large eggs
- ½ cup plain Greek yogurt
- 2 tablespoons lemon zest
- 1 tablespoon honey
- 1 teaspoon pure vanilla extract
- 2 cups zucchini (grated, with juices)
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons lemon juice

Preheat the Oven:
Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang for easy removal. -
Mix Dry Ingredients:
In a bowl, whisk together flour, baking soda, and salt. Set aside. -
Cream Wet Ingredients:
In a large bowl, beat sugar, melted butter, and eggs until smooth (about 2 minutes). -
Add Flavors:
Mix in Greek yogurt, lemon zest, honey, and vanilla extract until just combined. -
Incorporate Zucchini:
Fold in grated zucchini (with juices) gently. -
Combine Wet and Dry:
Gradually add the dry ingredients to the wet mixture. Stir until just combined. Avoid overmixing. -
Bake:
Pour batter into the prepared pan and bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean. -
Cool:
Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely. -
Make the Glaze:
Whisk powdered sugar and lemon juice together until smooth. Drizzle over cooled bread. -
Serve:
