Description
A gourmet Lobster Cobb Salad featuring fresh ingredients and a delicious dressing.
Ingredients
- 2 cups cooked lobster meat, chopped
- 4 cups mixed salad greens (such as romaine and arugula)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup crumbled blue cheese
- 1/2 cup cooked bacon, crumbled
- 2 hard-boiled eggs, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the mixed salad greens, cherry tomatoes, avocado, blue cheese, bacon, hard-boiled eggs, and red onion.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to combine.
- Add the chopped lobster meat on top of the salad.
- Serve immediately, or chill in the refrigerator for about 15 minutes before serving for a refreshing taste.
Notes
- For a lighter version, substitute the blue cheese with feta cheese.
- Add a squeeze of fresh lemon juice over the lobster for extra flavor.
