Ingredients

  • 2 cups cooked lobster meat, chopped
  • 4 cups mixed salad greens (such as romaine and arugula)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup crumbled blue cheese
  • 1/2 cup cooked bacon, crumbled
  • 2 hard-boiled eggs, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, avocado, blue cheese, bacon, hard-boiled eggs, and red onion.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Add the chopped lobster meat on top of the salad.
