Description

A creamy and flavorful Lobster Risotto with a hint of lemon and thyme, perfect for a special occasion.


Ingredients

  • 2 cups Arborio rice
  • 4 cups chicken or seafood broth
  • 1 cup dry white wine
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked lobster meat, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a medium saucepan, heat the broth over low heat. Keep it warm but not boiling.
  2. In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the Arborio rice to the skillet and toast for 2-3 minutes, stirring frequently until the rice is slightly translucent.
  5. Pour in the white wine and cook, stirring constantly, until the wine is mostly absorbed.
  6. Begin adding the warm broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
  7. Stir in the cooked lobster meat, Parmesan cheese, lemon juice, lemon zest, and thyme. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until heated through.
  8. Remove from heat and let the risotto sit for a minute. Garnish with chopped parsley before serving.

Notes

  • To enhance the flavor, consider adding a splash of heavy cream for a richer texture.
  • For a vegetarian version, substitute the lobster with sautéed mushrooms and use vegetable broth instead of chicken or seafood broth.
