A refreshing lobster salad recipe perfect for a light meal or appetizer.
Ingredients
- 2 cups cooked lobster meat, chopped
- 1/2 cup mayonnaise
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1/4 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 4 cups mixed salad greens
- 1 avocado, sliced (optional)
Instructions
- In a large bowl, combine the chopped lobster meat, mayonnaise, lemon juice, Dijon mustard, celery, red onion, and parsley. Mix well until all ingredients are evenly coated.
- Season the mixture with salt and pepper to taste. Adjust the seasoning as needed.
- Chill the lobster salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
- To serve, place a generous handful of mixed salad greens on each plate. Top with a scoop of the lobster salad and garnish with avocado slices if desired.
Notes
- For a spicy kick, add a teaspoon of hot sauce or a pinch of cayenne pepper to the lobster mixture.
- You can substitute the lobster with crab meat or shrimp for a different seafood flavor.
