Ingredients

  • 1 ½ cups powdered sugar
  • 1 cup almond flour
  • ¼ cup finely chopped pistachios
  • 3 large egg whites, at room temperature
  • ¼ teaspoon cream of tartar
  • ½ cup granulated sugar
  • ½ teaspoon vanilla extract
  • ½ cup fresh raspberries
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar (for filling)
  • 1 teaspoon raspberry extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a bowl, sift together the powdered sugar, almond flour, and chopped pistachios. Set aside.
  3. In a separate bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and continue beating until soft peaks form. Gradually add the granulated sugar while beating until stiff peaks form and the mixture is glossy.
  4. Gently fold the dry mixture into the egg whites in three additions, being careful not to deflate the meringue. The batter should flow like lava.
  5. Transfer the batter to a piping bag fitted with a round tip. Pipe 1.5-inch circles onto the prepared baking sheets, leaving space between each macaron.
  6. Tap the baking sheets on the counter to release any air bubbles. Let the macarons sit at room temperature for 30-60 minutes until they form a skin.
  7. Bake the macarons for 15-18 minutes, rotating the sheets halfway through. They should have a smooth surface and a slight foot. Let them cool completely on the baking sheets.
  8. For the filling, mash the fresh raspberries in a bowl. In another bowl, beat the softened butter until creamy. Gradually add the powdered sugar, raspberry extract, and a pinch of salt, mixing until smooth. Fold in the mashed raspberries.
  9. Pair up the cooled macaron shells and pipe a dollop of raspberry filling onto the flat side of one shell. Sandwich it with the other shell.
  10. Let the assembled macarons sit in the refrigerator for at least 24 hours to allow the flavors to meld before serving.
