Description
Mango Crumb Bars are a delightful tropical treat made with ripe mangoes and a crumbly oat topping.
Ingredients
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar, packed
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups ripe mango, diced (about 2 medium mangoes)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/4 cup granulated sugar
Instructions
- Preheat the oven to 350°F. Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
- In a large bowl, combine the flour, oats, brown sugar, baking powder, and salt. Stir in the melted butter and vanilla extract until the mixture is crumbly. Reserve 1 cup of this mixture for the topping. Press the remaining mixture evenly into the bottom of the prepared baking dish.
- In another bowl, mix the diced mango with lemon juice, cornstarch, and granulated sugar until well combined. Spread the mango mixture evenly over the crust in the baking dish.
- Sprinkle the reserved crumb mixture over the mango layer, covering it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown. Remove from the oven and let cool completely in the pan on a wire rack. Once cooled, cut into squares and serve.
Notes
- This recipe makes 12 servings.
- For a tropical twist, try adding shredded coconut to the crumb mixture.
- You can also substitute peaches or pineapples for the mango for a different flavor.
