Description

Mango Crumb Bars are a delightful tropical treat made with ripe mangoes and a crumbly oat topping.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups ripe mango, diced (about 2 medium mangoes)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F. Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  2. In a large bowl, combine the flour, oats, brown sugar, baking powder, and salt. Stir in the melted butter and vanilla extract until the mixture is crumbly. Reserve 1 cup of this mixture for the topping. Press the remaining mixture evenly into the bottom of the prepared baking dish.
  3. In another bowl, mix the diced mango with lemon juice, cornstarch, and granulated sugar until well combined. Spread the mango mixture evenly over the crust in the baking dish.
  4. Sprinkle the reserved crumb mixture over the mango layer, covering it evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown. Remove from the oven and let cool completely in the pan on a wire rack. Once cooled, cut into squares and serve.

  • For a tropical twist, try adding shredded coconut to the crumb mixture.
