A delicious and tropical Mango Curd Tart that combines a buttery crust with a smooth mango filling, perfect for any dessert lover.
Ingredients
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, chilled and cubed
- ¼ cup granulated sugar
- 1 large egg yolk
- 2 to 4 tablespoons ice water
- 1 cup mango puree (fresh or canned)
- ¾ cup granulated sugar
- 3 large eggs
- ½ cup unsalted butter, melted
- 1 tablespoon lime juice
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, combine the flour and sugar. Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Stir in the egg yolk and gradually add ice water, mixing until the dough comes together.
- Form the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
- Prick the bottom with a fork and line with parchment paper. Fill with pie weights or dried beans.
- Bake for 15 minutes, then remove the weights and parchment. Bake for an additional 10 minutes or until lightly golden. Let cool.
- In a medium bowl, whisk together the mango puree, sugar, eggs, melted butter, lime juice, vanilla extract, and salt until smooth.
- Pour the mango mixture into the cooled tart shell.
- Bake the tart for 25-30 minutes or until the filling is set but still slightly jiggly in the center.
- Remove from the oven and let cool completely at room temperature, then refrigerate for at least 2 hours before serving.
Notes
- For a tropical twist, try adding shredded coconut to the crust.
- Top the tart with fresh fruit like kiwi or berries.
- You can substitute the mango puree with other fruit purees like passion fruit or peach for different flavors.
