Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 2 to 4 tablespoons cold water
  • 1 cup mango puree (fresh or canned)
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup unsalted butter, melted
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, mix the flour with the sugar until well combined.
  3. Incorporate the softened butter and egg yolk, blending until the mixture resembles coarse crumbs.
  4. Slowly add cold water, one tablespoon at a time, mixing until a dough forms.
  5. Evenly press the dough into a 9-inch tart pan, ensuring it covers the bottom and sides.
  6. Use a fork to poke holes in the base to prevent it from puffing up during baking.
  7. Place the tart shell in the oven and bake for about 15-20 minutes, or until it turns a light golden color. Allow it to cool.
  8. In another bowl, whisk together the mango puree, sugar, eggs, melted butter, lime juice, and lime zest until creamy and smooth.
  9. Carefully pour the filling into the cooled tart shell.
  10. Return the tart to the oven and bake for an additional 25-30 minutes, until the filling is set but still has a slight jiggle in the center.
  11. Let it cool completely at room temperature before refrigerating for at least 2 hours.
  12. Slice the tart and enjoy it chilled.
