  • 1 cup ripe mango, diced
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract. Stir until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
  4. Gently fold in the diced mango.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook for another 2-3 minutes, or until golden brown.
