Description
Mango Pancakes are a delicious and tropical twist on traditional pancakes, perfect for breakfast or brunch.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 cup ripe mango, diced
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
- Fold in the diced mango gently into the batter.
- Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.
- Remove from the skillet and keep warm while you repeat with the remaining batter.
Notes
- For a tropical twist, add shredded coconut or chopped nuts to the batter.
- Serve the pancakes with a drizzle of honey or maple syrup and extra diced mango on top for added flavor and presentation.
