Ingredients
- 2 ripe mangoes, peeled, pitted, and diced
- 1 red bell pepper, diced
- 1 cucumber, diced

- 1 jalapeño, seeded and minced (optional)
- 2 tablespoons lime juice

Instructions
- In a large mixing bowl, combine the diced mangoes, red bell pepper, cucumber, red onion, cilantro, and jalapeño (if using).
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine all ingredients.
