Description

Mango Tres Leches Cake is a delicious and moist dessert soaked in three types of milk, topped with whipped cream and fresh mango.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1 can (12 ounces) evaporated milk
  • 1 can (14 ounces) sweetened condensed milk
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 ripe mango, diced

Instructions

  1. Preheat the oven to 350°F. Grease and flour a 9×13-inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, alternating with the whole milk, beginning and ending with the flour mixture. Mix until just combined.
  6. Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan.
  7. Once the cake is cool, poke holes all over the top using a fork.
  8. In a separate bowl, whisk together the evaporated milk, sweetened condensed milk, and whole milk. Pour the milk mixture evenly over the cake, allowing it to soak in.
  9. Cover and refrigerate for at least 2 hours, or overnight for best results.
  10. Before serving, whip the heavy cream, powdered sugar, and vanilla extract together until soft peaks form. Spread the whipped cream over the top of the cake. Garnish with diced mango.
