Description

Mango Tres Leches is a delightful and moist cake soaked in a mixture of three types of milk, topped with whipped cream and fresh mangoes.


Ingredients

  • 2 cups whole milk
  • 1 cup sweetened condensed milk
  • 1 cup evaporated milk
  • 1 cup heavy cream
  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 2 ripe mangoes, peeled and diced
  • 1 cup whipped cream (for topping)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a separate bowl, combine the flour, baking powder, and salt, whisking them together until well mixed.
  3. In a large mixing bowl, beat the eggs and sugar together until airy and pale, about 5 minutes.
  4. Add the vanilla extract and mix it in thoroughly.
  5. Gradually fold the dry ingredients into the egg mixture, being careful not to overmix.
  6. Transfer the batter into the greased baking dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, whisk together the whole milk, sweetened condensed milk, evaporated milk, and heavy cream in a bowl until smooth.
  8. After the cake has finished baking, let it cool for about 10 minutes.
  9. Use a fork or skewer to poke several holes across the surface of the cake.
  10. Carefully pour the milk mixture over the warm cake, ensuring it seeps into the holes.
  11. Allow the cake to cool completely, then place it in the refrigerator for at least 2 hours or overnight for optimal soaking.
