Mango Tres Leches is a delightful and moist cake soaked in a mixture of three types of milk, topped with whipped cream and fresh mangoes.
Ingredients
- 2 cups whole milk
- 1 cup sweetened condensed milk
- 1 cup evaporated milk
- 1 cup heavy cream
- 1 cup all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup granulated sugar
- 5 large eggs
- 1 teaspoon vanilla extract
- 2 ripe mangoes, peeled and diced
- 1 cup whipped cream (for topping)
- Fresh mint leaves (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- In a separate bowl, combine the flour, baking powder, and salt, whisking them together until well mixed.
- In a large mixing bowl, beat the eggs and sugar together until airy and pale, about 5 minutes.
- Add the vanilla extract and mix it in thoroughly.
- Gradually fold the dry ingredients into the egg mixture, being careful not to overmix.
- Transfer the batter into the greased baking dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, whisk together the whole milk, sweetened condensed milk, evaporated milk, and heavy cream in a bowl until smooth.
- After the cake has finished baking, let it cool for about 10 minutes.
- Use a fork or skewer to poke several holes across the surface of the cake.
- Carefully pour the milk mixture over the warm cake, ensuring it seeps into the holes.
- Allow the cake to cool completely, then place it in the refrigerator for at least 2 hours or overnight for optimal soaking.
- When ready to serve, generously spread whipped cream on top of the cake and scatter the diced mangoes over it.
- Optionally, add fresh mint leaves for garnish.
