Ingredients

  • Turkey breast (bone-in or boneless, skin-on): 1 (2–2½ lbs)
  • Fresh rosemary twigs: 3 (for garnish)

For the Marinade:

  • Olive oil: ¼ cup
  • Sesame oil: 2 tbsp
  • Low-sodium soy sauce: ½ cup
  • Worcestershire sauce: 2 tbsp
  • Lemon juice (from 1 lemon): 2 tbsp
  • Honey or maple syrup: ½ cup
  • Garlic (minced): 8 cloves
  • Fresh rosemary twigs: 3
  • Freshly ground black pepper: 1 tsp
  • Kosher salt: 4 tsp

Instructions

  • Prepare the Marinade
    • Combine olive oil, sesame oil, soy sauce, Worcestershire sauce, lemon juice, honey, minced garlic, rosemary, black pepper, and salt in a bowl or large Ziplock bag. Mix well.
  • Marinate the Turkey
    • Place turkey breast in the marinade, ensuring full coverage.
    • Seal and refrigerate for 12–24 hours for maximum flavor.
  • Preheat the Oven
    • Preheat oven to 325°F.
    • Use a snug baking dish to prevent marinade evaporation.
  • Roast the Turkey
    • Place the marinated turkey breast in the baking dish, pouring remaining marinade over it.
    • Roast uncovered for 1–1½ hours, checking for an internal temperature of 160°F (it will rise to 165°F during resting).
  • Baste Regularly
    • Baste with pan juices every 20 minutes to keep the turkey moist and enhance browning.
  • Optional Broiling
    • For extra browning, broil for 2–3 minutes when the turkey reaches ~150°F. Watch closely to prevent burning.
  • Rest and Serve
    • Transfer turkey to a platter and let it rest for 5 minutes before carving.
    • Garnish with fresh rosemary and serve with pan juices.
