Ingredients

  • 8 ounces uncooked pasta
  • 2 tablespoons butter
  • 1/2 tablespoon flour
  • 34 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1/3 cup dry white wine or chicken broth
  • 1 cup heavy/whipping cream
  • 1/3 cup sun-dried tomatoes
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups cooked/rotisserie chicken, shredded
  • 1/3 cup freshly grated parmesan cheese (plus more for serving)
  • Small handful fresh basil, torn or chopped
  • Salt & pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Prepare the Sauce: In a large skillet over medium heat, melt butter. Stir in flour and cook for 1 minute to form a light roux.
  3. Add Aromatics & Wine: Stir in minced garlic and tomato paste, cooking for 1 minute. Pour in white wine or chicken broth and let it reduce slightly.
  4. Incorporate the Cream & Seasonings: Whisk in heavy cream, then add sun-dried tomatoes, oregano, and crushed red pepper flakes. Simmer for a few minutes until thickened.
  5. Add Chicken & Cheese: Stir in shredded chicken and grated parmesan cheese until well combined.
  6. Combine with Pasta: Add drained pasta to the skillet and toss until well coated. If the sauce is too thick, add reserved pasta water to adjust consistency.
  7. Serve & Garnish: Plate the pasta and top with extra parmesan cheese and fresh basil. Serve immediately.
