Ingredients
- 8 ounces uncooked pasta
- 2 tablespoons butter
- 1/2 tablespoon flour
- 3–4 cloves garlic, minced
- 1 tablespoon tomato paste
- 1/3 cup dry white wine or chicken broth
- 1 cup heavy/whipping cream
- 1/3 cup sun-dried tomatoes
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 2 cups cooked/rotisserie chicken, shredded
- 1/3 cup freshly grated parmesan cheese (plus more for serving)
- Small handful fresh basil, torn or chopped
- Salt & pepper to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/2 cup of pasta water before draining.
- Prepare the Sauce: In a large skillet over medium heat, melt butter. Stir in flour and cook for 1 minute to form a light roux.
- Add Aromatics & Wine: Stir in minced garlic and tomato paste, cooking for 1 minute. Pour in white wine or chicken broth and let it reduce slightly.
- Incorporate the Cream & Seasonings: Whisk in heavy cream, then add sun-dried tomatoes, oregano, and crushed red pepper flakes. Simmer for a few minutes until thickened.
- Add Chicken & Cheese: Stir in shredded chicken and grated parmesan cheese until well combined.
- Combine with Pasta: Add drained pasta to the skillet and toss until well coated. If the sauce is too thick, add reserved pasta water to adjust consistency.
- Serve & Garnish: Plate the pasta and top with extra parmesan cheese and fresh basil. Serve immediately.
