Ingredients

  • 4 skinless salmon fillets
  • ½ cup sun-dried tomatoes, chopped

  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • ¼ cup Parmesan cheese, grated

Instructions

  1. Prepare the Salmon:

    • Pat the salmon fillets dry with a paper towel to ensure a good sear.
    • Season both sides of the salmon with salt, pepper, and half of the Italian seasoning.
    • Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 3–4 minutes on each side until golden brown and almost cooked through. Remove the salmon from the skillet and set aside.
  2. Make the Creamy Sauce:

    • Lower the heat to medium and, in the same skillet, sauté the minced garlic until fragrant, about 1 minute.
    • Add the chopped sun-dried tomatoes and remaining Italian seasoning, cooking for 2 minutes to release their flavors.
    • Pour in the heavy cream, stirring constantly, and bring to a gentle simmer. Let the sauce thicken slightly for 3–5 minutes.
  3. Add Parmesan Cheese:

    • Gradually stir in the grated Parmesan cheese, mixing until fully melted and incorporated.
    • Taste and adjust the seasoning with additional salt and pepper, if needed.
  4. Combine and Serve:

    • Return the salmon fillets to the skillet, spooning the creamy sauce over the top.
    • Cook for another 3–5 minutes, allowing the salmon to finish cooking and absorb the flavors of the sauce.
    • Garnish with freshly chopped basil and serve immediately.
