Ingredients

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 4 whole wheat pita pockets
  • 1/2 cup tzatziki sauce

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked through, about 6-8 minutes.
  4. Stir in the cumin, smoked paprika, oregano, salt, and pepper. Cook for another 2 minutes to combine the flavors.
  5. While the chicken is cooking, prepare the salad by combining the cherry tomatoes, cucumber, feta cheese, and parsley in a bowl. Toss gently to mix.
  6. To assemble the pitas, warm the pita pockets in a toaster or on a skillet for a minute.
  7. Fill each pita with the cooked chicken mixture and top with the salad and a generous spoonful of tzatziki sauce.
  8. Serve immediately, or chill the chicken mixture for 30 minutes for a refreshing cold option.
