Ingredients

  • 4 (6-ounce) cod fillets
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pitted Kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, lemon juice, minced garlic, oregano, salt, black pepper, and red pepper flakes (if using).
  3. Place the cod fillets in a baking dish and brush them with the olive oil mixture, ensuring they are well coated.
  4. Scatter the cherry tomatoes and Kalamata olives around the cod in the baking dish.
  5. Bake in the preheated oven for 15-20 minutes, or until the cod flakes easily with a fork and is opaque throughout.
  6. Remove from the oven and sprinkle the chopped parsley and basil over the top.
  7. Serve immediately with lemon wedges on the side.
