Description
A delicious Mediterranean-inspired dish featuring cod fillets topped with a herb crust and served with cherry tomatoes and Kalamata olives.
Ingredients
- 4 (6-ounce) cod fillets
- 1 cup cherry tomatoes, halved
- 1/4 cup pitted Kalamata olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Lemon wedges for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, lemon juice, minced garlic, oregano, salt, black pepper, and red pepper flakes (if using).
- Place the cod fillets in a baking dish and brush them with the olive oil mixture, ensuring they are well coated.
- Scatter the cherry tomatoes and Kalamata olives around the cod in the baking dish.
- Bake in the preheated oven for 15-20 minutes, or until the cod flakes easily with a fork and is opaque throughout.
- Remove from the oven and sprinkle the chopped parsley and basil over the top.
- Serve immediately with lemon wedges on the side.
Notes
- For added flavor, marinate the cod in the olive oil mixture for 30 minutes before baking.
- Substitute the cod with other white fish like tilapia or haddock for a different taste.
