Ingredients
- 3 cups cantaloupe, diced
- 3 cups honeydew melon, diced
- 2 cups watermelon, diced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large mixing bowl, combine the diced cantaloupe, honeydew melon, and watermelon. Gently toss the melons together to mix them evenly.
- In a small bowl, whisk together the lime juice, honey, olive oil, salt, and black pepper until well combined.
- Drizzle the honey-lime vinaigrette over the melon mixture and toss gently to coat all the pieces.
- Add the chopped mint leaves and give the salad one last gentle toss.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve in individual bowls or on a large platter as a refreshing side dish.
