Combining sweet corn, bold spices, and a hint of heat, this dip is a crowd-pleaser that requires no cooking and can be made ahead of time. Serve it with chips or fresh veggies for a snack everyone will love!

Ingredients

For the Dip:

  • 1 cup 2% plain Greek yogurt
  • ¾ cup olive-oil mayonnaise
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 3 (11-ounce) cans Mexican-style corn, drained
  • 16 ounces shredded reduced-fat cheddar cheese
  • 4 large or 6 small green onions, sliced
  • 1 jalapeño, seeded and chopped

Optional Topping and Serving:

  • Hot sauce, to taste
  • Fritos Scoops, tortilla chips, or fresh veggies

Instructions

Prepare the Base

  • In a large mixing bowl, combine the Greek yogurt, mayonnaise, chili powder, garlic powder, and cumin.
  • Stir until smooth and well-blended.

2. Add the Mix-Ins

  • Fold in the drained Mexican-style corn, shredded cheese, sliced green onions, and chopped jalapeño.
  • Mix gently to distribute the ingredients evenly.

3. Chill the Dip

  • Cover the bowl with plastic wrap or transfer the dip to an airtight container.
  • Refrigerate for at least 2 hours or overnight to allow the flavors to meld.

4. Serve and Enjoy

  • Before serving, sprinkle with a dash of hot sauce if desired.
  • Serve with Fritos Scoops, tortilla chips, or fresh veggies for dipping.

Notes

  • Maximize Flavor: Let the dip chill for several hours—overnight is ideal—for the best flavor.
  • Customize the Heat: Adjust the jalapeño and hot sauce to suit your spice preference.
  • Choose the Right Corn: Use Mexican-style or fiesta corn for added flavor. If unavailable, use regular corn and add diced red bell peppers.
