Quick to prepare and endlessly customizable, it’s ideal for casual dinners, gatherings, or a flavorful twist on your pizza night.

Ingredients

Base Ingredients:

  • 1 lb. pizza dough (room temperature)
  • All-purpose flour (for dusting)

Sauce:

  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lime juice
  • ½ teaspoon chili powder (plus more for sprinkling)
  • ½ teaspoon kosher salt

Toppings:

  • 1 cup corn kernels (fresh or thawed from frozen)
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled cotija cheese
  • Fresh cilantro, chopped
  • Lime wedges (for serving)

Instructions

  • Prepare the Oven and Baking Sheets:
    • Preheat your oven to 425°F (220°C).
    • Lightly dust two baking sheets with flour to prevent sticking.
  • Shape the Dough:
    • On a floured surface, divide the pizza dough into two balls.
    • Roll or stretch each ball into a rectangle approximately 12″x6″. Transfer the dough to the prepared baking sheets.
  • Make the Sauce:
    • In a small bowl, mix the sour cream, mayonnaise, minced garlic, lime juice, chili powder, and salt until smooth.
    • Reserve ¼ cup of the sauce for drizzling later.
  • Assemble the Flatbreads:
    • Spread the remaining sauce evenly over each flatbread, leaving a small border around the edges.
    • Top with corn kernels, shredded mozzarella, and crumbled cotija cheese.
    • Sprinkle a pinch of chili powder over the toppings for added flavor.
  • Bake the Flatbreads:
    • Place the baking sheets in the oven and bake for 15–20 minutes.
    • Rotate the sheets between the upper and lower racks after 10 minutes to ensure even cooking.
    • The flatbreads are ready when the crust is crisp and the cheese is golden and bubbly.
  • Garnish and Serve:
    • Drizzle the reserved sauce over the baked flatbreads.
    • Sprinkle with chopped cilantro and serve with lime wedges for an extra burst of flavor.
    • Slice and enjoy warm!

Notes

  • Use Fresh Ingredients: Fresh corn kernels and high-quality cheese elevate the flavor.
  • Room Temperature Dough: Letting the dough warm slightly makes it easier to stretch.
  • Even Cooking: Rotate baking sheets for uniform results.
