Ingredients

For the Crust:

  • 26 Mint Oreos, crushed into fine crumbs
  • 4 tablespoons (57g) butter, melted

For the Cheesecake Filling:

  • 24 oz (678g) cream cheese, softened
  • ¾ cup (150g) granulated sugar
  • ¾ cup (180g) sour cream, room temperature
  • ½ teaspoon vanilla extract
  • 1 teaspoon mint extract
  • ½ teaspoon salt
  • 3 large eggs, room temperature
  • Green food coloring (optional)
  • 14 Mint Oreos, chopped into chunks

Instructions

  • Preheat & Prep:

    • Preheat oven to 325°F (163°C).
    • Line a 9×13-inch baking dish with parchment paper, leaving a slight overhang for easy removal.
  • Make the Crust:

    • Crush 26 Mint Oreos into fine crumbs using a food processor or rolling pin.
    • Mix with melted butter and press firmly into the bottom of the prepared pan.
    • Bake for 10 minutes, then let cool slightly.
  • Prepare the Cheesecake Filling:

    • In a large bowl, beat cream cheese until smooth.
    • Add sugar, sour cream, vanilla extract, mint extract, and salt, mixing until well combined.
    • Beat in eggs one at a time, mixing just until incorporated.
    • If using, add a drop or two of green food coloring for a festive look.
  • Fold in the Cookies:

    • Gently fold half of the chopped Mint Oreos into the cheesecake batter.
    • Pour batter over the cooled crust, smoothing it out evenly.
    • Sprinkle remaining Mint Oreo chunks on top.
  • Bake & Cool:

    • Bake for 40 minutes, or until the edges are set but the center has a slight wobble.
    • Let cool at room temperature for 1 hour, then refrigerate for at least 3 hours (or overnight) to set.
  • Slice & Serve:

    • Lift the cheesecake out of the pan using the parchment overhang.
    • Slice into bars and enjoy!
