Description

Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries, and blackberries)
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the mixed berries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Gently toss to coat the berries and set aside.
  3. In another bowl, whisk together the flour, baking powder, salt, melted butter, and milk until just combined. The batter will be slightly lumpy.
  4. Pour the berry mixture into a greased 9-inch baking dish.
  5. Spoon the batter over the berries, spreading it out as evenly as possible.
  6. Sprinkle the brown sugar and cinnamon over the top of the batter.
  7. Bake for 35-40 minutes, or until the cobbler is golden brown and bubbly.
  8. Let it cool for about 10 minutes before serving.
