Description
A delicious Mixed Berry Cobbler made with a blend of fresh berries and a sweet, buttery topping.
Ingredients
- 2 cups mixed berries (strawberries, blueberries, raspberries, and blackberries)
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine the mixed berries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Gently toss to coat the berries and set aside.
- In another bowl, whisk together the flour, baking powder, salt, melted butter, and milk until just combined. The batter will be slightly lumpy.
- Pour the berry mixture into a greased 9-inch baking dish.
- Spoon the batter over the berries, spreading it out as evenly as possible.
- Sprinkle the brown sugar and cinnamon over the top of the batter.
- Bake for 35-40 minutes, or until the cobbler is golden brown and bubbly.
- Let it cool for about 10 minutes before serving.
Notes
- For a richer flavor, add a teaspoon of almond extract to the berry mixture.
- You can substitute the mixed berries with peaches or apples for a different fruit cobbler.
- Serve warm with a scoop of vanilla ice cream for an extra treat.
