Description

A refreshing mixed salad featuring a variety of vegetables, crumbled goat cheese, and sunflower seeds, dressed with a light vinaigrette.


Ingredients

  • 2 cups assorted leafy greens
  • 1 cup halved grape tomatoes
  • 1 cup diced zucchini
  • 1 cup chopped sweet pepper (any hue)
  • 1/2 cup finely sliced shallots
  • 1/2 cup peas (fresh, canned, or frozen)
  • 1/4 cup crumbled goat cheese
  • 1/4 cup pumpkin seeds
  • 1/4 cup avocado oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon whole grain mustard
  • Salt and freshly ground pepper to taste

Instructions

  1. Place the assorted leafy greens in a spacious mixing bowl.
  2. Add the grape tomatoes, zucchini, sweet pepper, shallots, peas, goat cheese, and pumpkin seeds on top.
  3. In a separate bowl, blend the avocado oil, balsamic vinegar, maple syrup, whole grain mustard, salt, and pepper until smooth.
  4. Drizzle the dressing over the salad mixture and gently fold the ingredients together.
  5. Allow the salad to rest for about 10 minutes to enhance the flavors.
  6. Serve right away, or chill in the refrigerator for up to an hour.
