Description
A refreshing mixed salad featuring a variety of vegetables, crumbled goat cheese, and sunflower seeds, dressed with a light vinaigrette.
Ingredients
- 2 cups assorted leafy greens
- 1 cup halved grape tomatoes
- 1 cup diced zucchini
- 1 cup chopped sweet pepper (any hue)
- 1/2 cup finely sliced shallots
- 1/2 cup peas (fresh, canned, or frozen)
- 1/4 cup crumbled goat cheese
- 1/4 cup pumpkin seeds
- 1/4 cup avocado oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon maple syrup
- 1 teaspoon whole grain mustard
- Salt and freshly ground pepper to taste
Instructions
- Place the assorted leafy greens in a spacious mixing bowl.
- Add the grape tomatoes, zucchini, sweet pepper, shallots, peas, goat cheese, and pumpkin seeds on top.
- In a separate bowl, blend the avocado oil, balsamic vinegar, maple syrup, whole grain mustard, salt, and pepper until smooth.
- Drizzle the dressing over the salad mixture and gently fold the ingredients together.
- Allow the salad to rest for about 10 minutes to enhance the flavors.
- Serve right away, or chill in the refrigerator for up to an hour.
Notes
- For a protein boost, consider adding shrimp, lentils, or tofu.
- Swap the goat cheese for blue cheese or leave it out for a vegan alternative.
