Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 cup chicken broth
  • 1 cup cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (1 lb) refrigerated pie crusts (2 crusts)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F. Grease a muffin tin with cooking spray or butter.
  2. In a large mixing bowl, combine the shredded chicken, frozen mixed vegetables, chicken broth, cream of chicken soup, garlic powder, onion powder, thyme, salt, and pepper. Stir until well combined.
  3. Roll out the pie crusts on a lightly floured surface. Cut out circles that are slightly larger than the muffin tin cups (about 4-5 inches in diameter). You should get about 12 circles from the two crusts.
  4. Press each pie crust circle into the muffin tin cups, ensuring they cover the bottom and sides.
  5. Spoon the chicken mixture evenly into each pie crust, filling them about 3/4 full.
  6. Using any leftover pie crust, cut out small shapes (like stars or hearts) to place on top of each filled pie for decoration.
  7. Brush the edges of the pie crusts with the beaten egg to give them a golden color when baked.
  8. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Let the muffin tin chicken pot pies cool for a few minutes before carefully removing them from the tin. Serve warm.
