Description

This Mushroom Swiss Cheese Meatloaf takes a classic comfort food to the next level! Packed with juicy ground beef, earthy mushrooms, and melted Swiss cheese, it’s savory, creamy, and satisfying. Topped with a tangy ketchup glaze and baked to perfection, it’s the ultimate family dinner centerpiece.

Ingredients

  • 1 pound ground beef

  • 1 cup finely chopped mushrooms

  • 1 cup shredded Swiss cheese

  • 1/2 cup breadcrumbs

  • 1/2 cup chopped onion

  • 1/4 cup milk

  • 1 large egg

  • 2 tablespoons Worcestershire sauce

  • 1 teaspoon garlic powder

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon dried thyme

  • 1/4 cup ketchup (for topping)

Instructions

  • Preheat Oven:
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

  • Mix Ingredients:
In a large bowl, combine the ground beef, chopped mushrooms, Swiss cheese, breadcrumbs, onion, milk, egg, Worcestershire sauce, garlic powder, salt, pepper, and thyme. Mix until just combined—do not overmix.

  • Shape the Meatloaf:
Transfer the mixture into the loaf pan or shape into a loaf on the baking sheet. Press gently to create an even shape.

  • Top and Bake:
Spread ketchup over the top of the meatloaf. Bake for about 60 minutes, or until the internal temperature reaches 160°F (70°C).

  • Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing. Serve warm with your favorite sides.

Notes

  • Moisture Tip: Don’t skip the milk and mushrooms—both help keep the meatloaf juicy.

  • Cheese Swap: Try mozzarella, cheddar, or provolone for a twist.

  • Make Ahead: Assemble the loaf up to 1 day ahead and refrigerate. Bake just before serving.

  • Leftovers: Slice and enjoy in sandwiches, pasta bakes, or stuffed peppers!
