Ingredients:Ā 

  • 2 medium-size sweet potatoes (10.6 oz | 300g)Ā 
  • 4 oz | 120g cooked chickpeasĀ 
  • 1/2 cup (80g or 4 oz) of walnutsĀ 
  • 2 oz | 50g | 1/3 cup dairy-free feta cheeseĀ 
  • Wild rocket or mixed saladĀ 
  • 4 dates, choppedĀ 
  • Zest of 1 lemonĀ 

Spices:Ā 

  • 1 tsp sweet paprikaĀ 
  • 1/2 tsp garlic powderĀ 
  • Black pepper, to tasteĀ 
  • Salt, to tasteĀ 

Instructions:Ā 

  1. Preheat the Oven:Ā 
  • Preheat your oven to 400Ā°F (200Ā°C).Ā 
  1. Prepare the Sweet Potatoes:Ā 
  • Wash and scrub the sweet potatoes thoroughly. Use a fork to make several small holes in them.Ā 
  • Set the sweet potatoes on a parchment paper-lined baking sheet.Ā 
  • Bake in the preheated oven for about 45-50 minutes, or until they are tender and can be easily pierced with a fork.Ā 
  1. Prepare the Chickpeas and Walnuts:Ā 
  • While the sweet potatoes are baking, heat a small skillet over medium heat. Add the walnuts and toast them lightly for about 3-5 minutes, stirring occasionally until fragrant. Remove from heat and roughly chop the walnuts.Ā 
  • In the same skillet, add the cooked chickpeas and warm them for a few minutes. Sprinkle with sweet paprika, garlic powder, salt, and black pepper. Remove from heat and set aside.Ā

  • Once the sweet potatoes are baked and slightly cooled, cut them in half lengthwise. Carefully scoop out some of the flesh from each half, creating a small well in the center.Ā
