- 1/2 cup (80g or 4 oz) of walnutsĀ
- 2 oz | 50g | 1/3 cup dairy-free feta cheeseĀ
- Wild rocket or mixed saladĀ
- 4 dates, choppedĀ
- Zest of 1 lemonĀ

- 1 tsp sweet paprikaĀ
- 1/2 tsp garlic powderĀ
- Black pepper, to tasteĀ
- Salt, to tasteĀ
Instructions:Ā
- Preheat the Oven:Ā
- Preheat your oven to 400Ā°F (200Ā°C).Ā
- Prepare the Sweet Potatoes:Ā
- Wash and scrub the sweet potatoes thoroughly. Use a fork to make several small holes in them.Ā
- Set the sweet potatoes on a parchment paper-lined baking sheet.Ā
- Bake in the preheated oven for about 45-50 minutes, or until they are tender and can be easily pierced with a fork.Ā
- Prepare the Chickpeas and Walnuts:Ā
- While the sweet potatoes are baking, heat a small skillet over medium heat. Add the walnuts and toast them lightly for about 3-5 minutes, stirring occasionally until fragrant. Remove from heat and roughly chop the walnuts.Ā
- In the same skillet, add the cooked chickpeas and warm them for a few minutes. Sprinkle with sweet paprika, garlic powder, salt, and black pepper. Remove from heat and set aside.Ā
