Description

A delicious and creamy no-bake pie made with blueberries and chia seeds, perfect for a refreshing dessert.


Ingredients

  • 1 ½ cups fresh or frozen blueberries
  • 1 cup coconut milk (canned or carton)
  • ¼ cup maple syrup
  • ¼ cup chia seeds
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • Pinch of salt

Instructions

  1. In a medium saucepan over medium heat, combine the blueberries, coconut milk, maple syrup, and lemon juice. Cook for about 5-7 minutes until the blueberries start to break down and release their juices. Remove from heat and let cool slightly.
  2. Stir in the chia seeds and vanilla extract into the blueberry mixture. Allow it to sit for about 10 minutes, stirring occasionally, until it thickens.
  3. In a separate bowl, mix the graham cracker crumbs, melted butter, and a pinch of salt until well combined. Press the mixture firmly into the bottom of a 9-inch pie dish to form the crust.
  4. Pour the blueberry chia seed filling over the crust, spreading it evenly. Cover the pie with plastic wrap and refrigerate for at least 4 hours or until set.
  5. Once set, slice and serve chilled. Optionally, top with fresh blueberries or whipped cream before serving.
