Description
A delicious and creamy no-bake pie made with blueberries and chia seeds, perfect for a refreshing dessert.
Ingredients
- 1 ½ cups fresh or frozen blueberries
- 1 cup coconut milk (canned or carton)
- ¼ cup maple syrup
- ¼ cup chia seeds
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter, melted
- Pinch of salt
Instructions
- In a medium saucepan over medium heat, combine the blueberries, coconut milk, maple syrup, and lemon juice. Cook for about 5-7 minutes until the blueberries start to break down and release their juices. Remove from heat and let cool slightly.
- Stir in the chia seeds and vanilla extract into the blueberry mixture. Allow it to sit for about 10 minutes, stirring occasionally, until it thickens.
- In a separate bowl, mix the graham cracker crumbs, melted butter, and a pinch of salt until well combined. Press the mixture firmly into the bottom of a 9-inch pie dish to form the crust.
- Pour the blueberry chia seed filling over the crust, spreading it evenly. Cover the pie with plastic wrap and refrigerate for at least 4 hours or until set.
- Once set, slice and serve chilled. Optionally, top with fresh blueberries or whipped cream before serving.
Notes
- For a creamier texture, blend the blueberry filling before adding the chia seeds.
- Substitute honey or agave syrup for maple syrup for a different sweetness profile.
