Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup orange juice
  • 2 tablespoons orange zest
  • 1 tablespoon unflavored gelatin
  • 3 tablespoons cold water

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Refrigerate for 30 minutes to set.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.
  4. In a small bowl, sprinkle the gelatin over cold water and let it sit for about 5 minutes to bloom. Then, heat the mixture in the microwave for about 10-15 seconds until the gelatin dissolves. Stir in the orange juice and orange zest.
  5. Divide the cream cheese mixture in half. Mix the orange juice mixture into one half of the cream cheese mixture until well combined. Leave the other half plain.
  6. Spoon the orange mixture over the chilled crust, spreading it evenly. Then, dollop the plain cream cheese mixture on top of the orange layer. Use a knife or skewer to swirl the two mixtures together for a marbled effect.
  7. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight, until set.
  8. Slice and serve chilled.
