No-Bake Gingerbread Bliss Cookies: A Festive Treat Without the Oven

  • Author: Annabel
  • Total Time: 50 minutes
  • Yield: 12–15 cookies

Description

Get all the warm, festive flavors of gingerbread without turning on the oven! These No-Bake Gingerbread Bliss Cookies are soft, chewy, and packed with holiday spices. Made with wholesome ingredients like nuts, dates, and molasses, these cookies are naturally sweetened, gluten-free, and vegan. Perfect for a quick holiday treat or a fun family activity!

Ingredients

For the Cookie Dough:

  • 2 cups raw cashews or pecans
  • 11.5 cups medjool dates, pitted
  • ¼ cup molasses
  • ⅓ cup coconut flour

For the Gingerbread Spice Mix:

  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon allspice

Instructions

Step 1: Prepare the Nuts

  • Add the raw cashews or pecans to a food processor.
  • Pulse until they form a fine, crumbly texture, similar to coarse flour. Be careful not to over-process into nut butter.

Step 2: Blend the Base

  • Add the pitted medjool dates and molasses to the nut mixture in the food processor.
  • Blend until the mixture sticks together and forms a dough-like consistency.

Step 3: Add Dry Ingredients

  • Sprinkle in the coconut flour and gingerbread spice mix (cinnamon, ginger, and allspice).
  • Blend again until everything is fully combined. The dough should hold its shape when pressed.
  • If the dough is too sticky, add more coconut flour, one teaspoon at a time. If too dry, add a small drizzle of water or extra molasses.

Step 4: Shape the Cookies

  • Scoop tablespoon-sized portions of dough and roll them between your palms to form smooth balls.
  • Flatten each ball slightly to create a traditional cookie shape.

Step 5: Chill the Cookies

  • Arrange the cookies on a parchment-lined tray.
  • Refrigerate for at least 30 minutes to allow them to firm up.

Step 6: Serve and Enjoy

  • Once chilled, the cookies are ready to enjoy!
  • Store them in an airtight container in the refrigerator for up to one week or in the freezer for longer storage.

Notes

  • Fresh Dates Are Key: Soft medjool dates blend more easily. If your dates are dry, soak them in warm water for 10 minutes, then drain well before using.
  • Adjust the Sweetness: Add an extra date or two for sweeter cookies, or reduce the molasses for a milder flavor.
  • Customize the Spices: Feel free to tweak the gingerbread spice mix by adding a pinch of nutmeg or cloves for extra warmth.
  • Make-Ahead Option: These cookies freeze beautifully and can be made weeks in advance for holiday parties or gifting.
  • Nut-Free Version: Substitute cashews or pecans with sunflower seeds or pumpkin seeds for a nut-free alternative.
