A quick and easy recipe for delicious No-Bake Strawberry Cheesecake Bars, perfect for any occasion.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh strawberries, hulled and sliced
- 2 tablespoons lemon juice
- 2 tablespoons granulated sugar (for strawberries)
Instructions
- In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9×9-inch baking dish to form the crust. Refrigerate for 15 minutes to set.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spread the cream cheese mixture evenly over the chilled crust. Smooth the top with a spatula. Refrigerate for at least 4 hours, or until set.
- While the cheesecake is chilling, prepare the strawberries. In a bowl, combine the sliced strawberries, lemon juice, and 2 tablespoons of granulated sugar. Toss gently and let sit for about 15 minutes to macerate.
- Once the cheesecake is set, remove it from the refrigerator. Top with the macerated strawberries, spreading them evenly over the surface. Cut into bars and serve chilled.
Notes
- For a chocolate twist, add ¼ cup of cocoa powder to the cream cheese mixture.
- For a berry mix, substitute half of the strawberries with blueberries or raspberries for added flavor and color.
