Description

A quick and easy recipe for delicious No-Bake Strawberry Cheesecake Bars, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons lemon juice
  • 2 tablespoons granulated sugar (for strawberries)

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9×9-inch baking dish to form the crust. Refrigerate for 15 minutes to set.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Spread the cream cheese mixture evenly over the chilled crust. Smooth the top with a spatula. Refrigerate for at least 4 hours, or until set.
  5. While the cheesecake is chilling, prepare the strawberries. In a bowl, combine the sliced strawberries, lemon juice, and 2 tablespoons of granulated sugar. Toss gently and let sit for about 15 minutes to macerate.
  6. Once the cheesecake is set, remove it from the refrigerator. Top with the macerated strawberries, spreading them evenly over the surface. Cut into bars and serve chilled.
