Description

A refreshing and delightful no-bake cheesecake featuring summer berries and peaches, perfect for warm weather gatherings.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh peaches, diced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • ¼ cup peach preserves

Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Place in the refrigerator to chill for 30 minutes.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  4. Gradually add the powdered sugar and vanilla extract, mixing until well blended.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  7. Fold in the diced peaches and mixed berries, reserving a few for garnish.
  8. Pour the cheesecake filling over the chilled crust and spread it evenly. Smooth the top with a spatula.
  9. Refrigerate the cheesecake for at least 4 hours, or until set.
  10. Before serving, warm the peach preserves in the microwave for about 15 seconds until slightly runny. Drizzle the warm preserves over the cheesecake and garnish with the reserved berries.
