A refreshing and delightful no-bake cheesecake featuring summer berries and peaches, perfect for warm weather gatherings.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh peaches, diced
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- ¼ cup peach preserves
Instructions
- In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Place in the refrigerator to chill for 30 minutes.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until well blended.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Fold in the diced peaches and mixed berries, reserving a few for garnish.
- Pour the cheesecake filling over the chilled crust and spread it evenly. Smooth the top with a spatula.
- Refrigerate the cheesecake for at least 4 hours, or until set.
- Before serving, warm the peach preserves in the microwave for about 15 seconds until slightly runny. Drizzle the warm preserves over the cheesecake and garnish with the reserved berries.
Notes
- For a lighter version, substitute half of the cream cheese with Greek yogurt.
- You can use any seasonal fruit you have on hand, such as mango or cherries, for a different flavor profile.
