Ingredients

For the Cookie Dough:

  • 1 ½ cups all-purpose flour
  • 1 ½ cups almond flour
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon kosher salt
  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Filling and Decoration:

  • ¾ cup Nutella (chocolate hazelnut spread)
  • Powdered sugar, for dusting
  • Cocoa powder (optional), for dusting

Instructions

  • Prepare the Dry Ingredients:
    • In a medium bowl, whisk together the all-purpose flour, almond flour, ground cinnamon, and kosher salt. Set aside.
  • Cream the Butter and Sugar:
    • In a stand mixer with a paddle attachment (or a hand mixer), cream the butter and sugar on medium speed until light and fluffy, about 3–5 minutes.
  • Add the Wet Ingredients:
    • Mix in the egg and vanilla extract on low speed until fully incorporated.
  • Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet mixture, ½ cup at a time, mixing on low speed. Once all the dry ingredients are combined, increase the mixer speed to medium-low and mix until the dough forms.
  • Roll Out the Dough:
    • Divide the dough into two equal portions and shape each into a disc.
    • Roll each disc between two sheets of parchment paper to a thickness of 1/8 inch.
    • Freeze the rolled dough for 45 minutes to 1 hour until firm.
  • Cut Out the Cookies:
    • Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
    • Remove one sheet of dough from the freezer, peel off the top parchment paper, and use a large heart-shaped cookie cutter to cut out cookies.
    • Use a smaller heart-shaped cutter to create cutouts in half of the cookies.
    • Repeat the process with the second sheet of dough.
  • Bake the Cookies:
    • Arrange the cookies on the prepared baking sheets, leaving about 1 inch of space between them.
    • Bake for 8 minutes or until the edges are lightly golden brown.
    • Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  • Fill and Assemble the Cookies:
    • Microwave the Nutella for about 10 seconds to make it easier to spread.
    • Spread a thin layer of Nutella on the flat side of the solid cookies.
    • Dust the cutout cookies with powdered sugar and sandwich them over the Nutella-spread cookies.
  • Decorate the Mini Hearts (Optional):
    • Dust the smaller cutout hearts with powdered sugar, cocoa powder, or a mix of both.
    • Alternatively, sandwich the mini hearts with Nutella for bite-sized treats.
