Description

This Old-Fashioned Sauerkraut Salad is a tangy, crunchy, and refreshing side dish perfect for barbecues, potlucks, or as a flavorful complement to any meal. Packed with crisp vegetables and a sweet and tangy dressing, this salad is not only delicious but also rich in probiotics for a healthy gut.

Ingredients

  • 2 cups sauerkraut, drained and rinsed

  • 1 cup diced bell peppers (red and green)

  • 1 cup diced celery

  • 1/2 cup diced red onion

  • 1/2 cup shredded carrots

  • 1/2 cup sugar

  • 1/2 cup apple cider vinegar

  • 1/4 cup vegetable oil

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon salt

  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Prepare the Ingredients: Drain and rinse the sauerkraut to remove excess saltiness. Dice the bell peppers, celery, and red onion. Shred the carrots and set all ingredients aside.

  2. Combine the Vegetables: In a large mixing bowl, add the sauerkraut, bell peppers, celery, red onion, and shredded carrots. Toss gently to combine.

  3. Make the Dressing: In a separate small bowl, whisk together the sugar, apple cider vinegar, vegetable oil, Dijon mustard, garlic powder, black pepper, and salt until well combined.

  4. Mix Everything Together: Pour the dressing over the sauerkraut and vegetable mixture. Stir well to ensure all ingredients are evenly coated.

  5. Chill for Best Flavor: Cover the bowl and refrigerate for at least 2 hours or overnight. This allows the flavors to meld together beautifully.

  6. Serve and Enjoy: Give the salad a quick toss before serving. Garnish with chopped parsley if desired.

Notes

  • For a spicier version, add finely diced jalapeños or a pinch of red pepper flakes.

  • If you prefer a sweeter salad, increase the sugar slightly or add raisins.

  • Substitute olive oil for vegetable oil for a richer flavor.

  • Make sure to drain and rinse store-bought sauerkraut well to control the saltiness.

  • This salad can be made up to 3 days in advance, stored in an airtight container in the refrigerator.
