A simple and delicious Olive Oil and Lemon Dressing that enhances the flavor of salads and dishes.
Ingredients
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup (optional)
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a medium bowl, whisk together the lemon juice, Dijon mustard, honey (if using), and minced garlic until well combined.
- Slowly drizzle in the olive oil while continuing to whisk until the dressing is emulsified and creamy.
- Season with salt and pepper to taste. Adjust the acidity or sweetness by adding more lemon juice or honey if desired.
- Transfer the dressing to a jar with a tight-fitting lid and refrigerate for at least 30 minutes to allow the flavors to meld. Shake well before serving.
Notes
- For a herby twist, add 1 tablespoon of finely chopped fresh herbs like parsley, basil, or dill.
- Substitute lime juice for lemon juice for a different citrus flavor, or try adding a teaspoon of balsamic vinegar for a richer taste.
