Ingredients
For the Chicken and Vegetables:
- 5 chicken thighs
- 1 teaspoon oregano
- Salt and black pepper, to taste
- 4–5 potatoes, roughly chopped
- 7–8 small carrots, chopped
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 onion, chopped
- 4 large cloves of garlic, chopped
- Handful of parsley, chopped
For the Honey Garlic Sauce:
- 90 ml honey
- 100 ml sweet chili sauce
- 2 tablespoons lemon juice
- 3 tablespoons soy sauce
- 3/4 tablespoon Dijon mustard
Instructions
Step 1: Prepare the Chicken
- Season the chicken thighs with oregano, salt, and black pepper.
- Heat the olive oil and butter in a large skillet over medium-high heat.
- Add the chicken thighs, skin-side down, and cook for 5-7 minutes per side, until golden brown and crispy. Remove the chicken from the skillet and set aside.
Step 2: Sauté the Vegetables
- In the same skillet, add the chopped onion and garlic.
- Sauté for about 2-3 minutes, until the onion becomes translucent and the garlic is fragrant.
Step 3: Add the Potatoes and Carrots
- Add the roughly chopped potatoes and carrots to the skillet.
- Cook for 5 minutes, stirring occasionally, until they start to soften.
Step 4: Make the Honey Garlic Sauce
- In a bowl, whisk together honey, sweet chili sauce, lemon juice, soy sauce, and Dijon mustard.
- Pour the sauce over the vegetables in the skillet and stir to coat them evenly.
Step 5: Combine the Chicken and Vegetables
- Return the browned chicken thighs to the skillet, nestling them among the vegetables.
- Reduce the heat to medium-low, cover the skillet, and let everything simmer for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
Step 6: Garnish and Serve
- Sprinkle the chopped parsley over the chicken and vegetables for a fresh, vibrant finish.
- Serve hot and enjoy your flavorful one-pan honey garlic chicken dinner!
Notes
- Use Bone-In Thighs: Bone-in, skin-on chicken thighs add more flavor and stay juicy during cooking.
- Even Veggie Cuts: Chop potatoes and carrots into similar sizes to ensure they cook evenly.
- Adjust the Sauce: If you prefer spicier flavors, add red chili flakes or sriracha to the sauce.
