Ingredients

For the Chicken and Vegetables:

  • 5 chicken thighs
  • 1 teaspoon oregano
  • Salt and black pepper, to taste
  • 45 potatoes, roughly chopped
  • 78 small carrots, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 onion, chopped
  • 4 large cloves of garlic, chopped
  • Handful of parsley, chopped

For the Honey Garlic Sauce:

  • 90 ml honey
  • 100 ml sweet chili sauce
  • 2 tablespoons lemon juice
  • 3 tablespoons soy sauce
  • 3/4 tablespoon Dijon mustard

Instructions

Step 1: Prepare the Chicken

  • Season the chicken thighs with oregano, salt, and black pepper.
  • Heat the olive oil and butter in a large skillet over medium-high heat.
  • Add the chicken thighs, skin-side down, and cook for 5-7 minutes per side, until golden brown and crispy. Remove the chicken from the skillet and set aside.

Step 2: Sauté the Vegetables

  • In the same skillet, add the chopped onion and garlic.
  • Sauté for about 2-3 minutes, until the onion becomes translucent and the garlic is fragrant.

Step 3: Add the Potatoes and Carrots

  • Add the roughly chopped potatoes and carrots to the skillet.
  • Cook for 5 minutes, stirring occasionally, until they start to soften.

Step 4: Make the Honey Garlic Sauce

  • In a bowl, whisk together honey, sweet chili sauce, lemon juice, soy sauce, and Dijon mustard.
  • Pour the sauce over the vegetables in the skillet and stir to coat them evenly.

Step 5: Combine the Chicken and Vegetables

  • Return the browned chicken thighs to the skillet, nestling them among the vegetables.
  • Reduce the heat to medium-low, cover the skillet, and let everything simmer for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

Step 6: Garnish and Serve

  • Sprinkle the chopped parsley over the chicken and vegetables for a fresh, vibrant finish.
  • Serve hot and enjoy your flavorful one-pan honey garlic chicken dinner!

Notes

  • Use Bone-In Thighs: Bone-in, skin-on chicken thighs add more flavor and stay juicy during cooking.
  • Even Veggie Cuts: Chop potatoes and carrots into similar sizes to ensure they cook evenly.
  • Adjust the Sauce: If you prefer spicier flavors, add red chili flakes or sriracha to the sauce.
