Ingredients

Base:

Instructions

  • Cook the Onion and Chicken:
    • Heat 1 tablespoon of olive oil in a large ovenproof skillet over medium heat.
    • Add the chopped onion and cubed chicken. Cook for 5 minutes, stirring occasionally, until the chicken starts to brown and is no longer pink.
    • Season with salt and black pepper to taste. Add minced garlic and cook for another 30 seconds until fragrant.
  • Add the Rice and Liquids:
    • Stir in the uncooked rice, cream of chicken soup, and chicken broth.
    • Mix well to ensure the rice is evenly coated and submerged.
  • Cook the Rice:
    • Bring the mixture to a boil, then reduce the heat to medium-low. Cover the skillet with a lid.
    • Cook for about 15 minutes, stirring occasionally, until the rice is fully cooked and most of the liquid is absorbed.
  • Add Broccoli and Cheese:
    • Stir in the broccoli florets and half of the shredded cheddar cheese. Cook for 2 more minutes to soften the broccoli slightly.
    • Sprinkle the remaining cheese over the top of the casserole.
  • Broil for a Cheesy Finish:
