Ingredients
For the Soup:
- 1 lb smoked or Italian sausage (or turkey sausage for a leaner option)
- 4 medium Russet potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream (or half-and-half for a lighter option)
- 2 tbsp butter (for sautéing)
- Salt and pepper, to taste
- ½ tsp paprika
Optional Add-Ins:
- 2 cups chopped kale or spinach (for added nutrition)
- ½ cup shredded cheddar cheese (for extra creaminess)
- Red pepper flakes, to taste (for spice lovers)
Instructions
- Cook the Sausage:
- Heat a large pot or Dutch oven over medium heat. Add the sausage and cook, breaking it into crumbles as it browns. Remove the sausage with a slotted spoon and set it aside.
- Sauté the Aromatics:
- In the same pot, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté for 3–4 minutes until the onions are translucent and fragrant.
- Add Potatoes and Broth:
- Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 15 minutes, or until the potatoes are fork-tender.
- Blend for Creaminess:
- Incorporate Cream and Sausage:
- Stir in the heavy cream and cooked sausage. Simmer for an additional 5 minutes to combine all the flavors.
- Add Optional Ingredients:
- If using kale or spinach, stir it into the soup during the last 3–5 minutes of cooking. Adjust seasoning with salt, pepper, and red pepper flakes as desired.
- Serve and Garnish:
- Ladle the soup into bowls and garnish with shredded cheddar cheese, crispy bacon bits, or additional red pepper flakes for an extra burst of flavor.
Notes
- Use Fresh Ingredients: Fresh garlic, onion, and potatoes enhance the overall flavor.
- Don’t Overblend: Blending too much can make the soup overly smooth and lose its hearty texture.
- Choose High-Quality Sausage: Opt for flavorful smoked or Italian sausage for the best results.
- Season Gradually: Add salt and pepper in stages to prevent over-salting.
