Ingredients
- 1 pound ground beef (extra lean)
- 1 small onion, chopped
- 3 cloves garlic, minced
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon black pepper (or to taste)
- 1 tablespoon Italian seasoning
- 2 cups marinara sauce
- 8 ounces mafalda pasta (uncooked)
- 3 cups low-sodium chicken broth
- 1 cup shredded mozzarella cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Cook the Beef
- Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces with a spoon. If there’s excess fat, drain it before proceeding.
2. Add Aromatics and Seasonings
- Stir in the chopped onion and minced garlic. Season with salt, black pepper, and Italian seasoning. Cook for 3 minutes, or until the onion is soft and translucent.
3. Add Liquids and Pasta
- Pour in the marinara sauce and chicken broth. Add the uncooked mafalda pasta. Stir to combine all ingredients.
4. Cook the Pasta
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and simmer for about 15 minutes, stirring occasionally. The pasta should be tender, and most of the liquid absorbed.
5. Add Cheese
- Sprinkle the shredded mozzarella cheese over the pasta. Stir until the cheese melts and blends with the sauce, about 1 minute.
6. Garnish and Serve
- Remove the skillet from heat. Garnish with chopped fresh parsley and serve hot.
Notes
- Choose the Right Pasta: Mafalda pasta is ideal because its ruffled edges mimic lasagna noodles. If unavailable, penne or rotini can work.
- Don’t Overcook the Pasta: Check for doneness to avoid mushy pasta.
- Add Veggies: Boost the nutrition with diced zucchini, spinach, or mushrooms.
