Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 cups beef broth
- 2 cups elbow macaroni
- 1 cup shredded cheddar cheese
- 1 cup milk
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika (optional, for extra depth)
- Salt and pepper, to taste
Optional Add-Ins for Extra Flavor:
- ½ cup diced tomatoes or pickles
- 1 tablespoon mustard or ketchup
- ½ teaspoon Worcestershire sauce
Instructions
Step 1: Sauté the Beef and Onion
- In a large pot or Dutch oven, cook the ground beef and diced onion over medium heat.
- Stir occasionally, breaking up the beef, until browned and onions are soft (about 5 minutes).
- Drain any excess fat.
Step 2: Build the Flavor Base
- Pour in the beef broth and bring it to a gentle boil.
- Stir in garlic powder, smoked paprika, and any optional add-ins like Worcestershire sauce or diced tomatoes.
Step 3: Cook the Pasta
- Add the elbow macaroni directly into the broth and cook uncovered for 7-8 minutes or until just al dente.
Step 4: Make it Cheesy & Creamy
- Reduce the heat to low, then stir in the milk and cheddar cheese.
- Stir continuously until the cheese is fully melted and the soup is thick and creamy.
Step 5: Season & Serve
- Taste and adjust with salt and pepper as needed.
- Ladle into bowls, garnish with extra cheese, diced pickles, or green onions, and enjoy!
Notes
- Don’t Overcook the Pasta – Since it will continue absorbing liquid, remove from heat once al dente.
- Use Freshly Grated Cheese – Pre-shredded cheese contains anti-caking agents that prevent smooth melting.
- Adjust the Thickness – Add a splash of broth or milk if the soup thickens too much.
- Make it Spicy – Stir in red pepper flakes or diced jalapeños for a kick!
