Description

Everything you love about a juicy cheeseburger and creamy mac and cheese—now in soup form! This One-Pot Macaroni Cheeseburger Soup is rich, hearty, and packed with savory beef, tender pasta, and melty cheese. It’s a cozy, satisfying meal that comes together in just 30 minutes, making it perfect for busy weeknights or when you need a comforting, crowd-pleasing dish.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika (optional, for extra depth)
  • Salt and pepper, to taste

Optional Add-Ins for Extra Flavor:

  • ½ cup diced tomatoes or pickles
  • 1 tablespoon mustard or ketchup
  • ½ teaspoon Worcestershire sauce

Instructions

Step 1: Sauté the Beef and Onion

  1. In a large pot or Dutch oven, cook the ground beef and diced onion over medium heat.
  2. Stir occasionally, breaking up the beef, until browned and onions are soft (about 5 minutes).
  3. Drain any excess fat.

Step 2: Build the Flavor Base

  1. Pour in the beef broth and bring it to a gentle boil.
  2. Stir in garlic powder, smoked paprika, and any optional add-ins like Worcestershire sauce or diced tomatoes.

Step 3: Cook the Pasta

  1. Add the elbow macaroni directly into the broth and cook uncovered for 7-8 minutes or until just al dente.

Step 4: Make it Cheesy & Creamy

  1. Reduce the heat to low, then stir in the milk and cheddar cheese.
  2. Stir continuously until the cheese is fully melted and the soup is thick and creamy.

Step 5: Season & Serve

  1. Taste and adjust with salt and pepper as needed.
  2. Ladle into bowls, garnish with extra cheese, diced pickles, or green onions, and enjoy!

Notes

  • Don’t Overcook the Pasta – Since it will continue absorbing liquid, remove from heat once al dente.
  • Use Freshly Grated Cheese – Pre-shredded cheese contains anti-caking agents that prevent smooth melting.
  • Adjust the Thickness – Add a splash of broth or milk if the soup thickens too much.
  • Make it Spicy – Stir in red pepper flakes or diced jalapeños for a kick!
