Description

A refreshing pasta salad featuring cherry tomatoes and blueberries, perfect for summer gatherings.


Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh blueberries
  • 1 cup mozzarella balls, halved
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, blueberries, mozzarella balls, red bell pepper, red onion, and fresh basil.
  3. Pour the Italian dressing over the pasta mixture and gently toss to combine.
  4. Season with salt and pepper to taste.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled or at room temperature.

Notes

  • For added crunch, consider mixing in 1/2 cup of chopped cucumbers or 1/4 cup of sliced black olives.
