Description

A delicious recipe for perfectly grilled cod served with a homemade romesco sauce, perfect for a healthy meal.


Ingredients

  • 4 cod fillets (6 ounces each)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • 1 lemon, zested and juiced
  • 1 cup roasted red peppers (jarred or homemade)
  • 1/2 cup almonds, toasted
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste
  • 1/4 cup olive oil

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, salt, pepper, smoked paprika, lemon zest, and lemon juice. Brush the mixture over both sides of the cod fillets.
  3. For the romesco sauce, combine roasted red peppers, almonds, garlic, parsley, red wine vinegar, smoked paprika, cayenne pepper (if using), and salt in a food processor. Blend until smooth.
  4. With the food processor running, slowly drizzle in the olive oil until the sauce is well combined and creamy. Adjust seasoning if necessary.
  5. Place the cod fillets on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.
  6. Remove the cod from the grill and let it rest for a couple of minutes.
  7. Serve the grilled cod topped with a generous spoonful of romesco sauce.

Notes

  • For added flavor, marinate the cod in the olive oil mixture for 30 minutes before grilling.
  • Substitute the almonds with walnuts or pine nuts for a different nutty flavor in the romesco sauce.
