Description
A delicious recipe for perfectly grilled cod served with a homemade romesco sauce, perfect for a healthy meal.
Ingredients
- 4 cod fillets (6 ounces each)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon smoked paprika
- 1 lemon, zested and juiced
- 1 cup roasted red peppers (jarred or homemade)
- 1/2 cup almonds, toasted
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tablespoon red wine vinegar
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt to taste
- 1/4 cup olive oil
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, salt, pepper, smoked paprika, lemon zest, and lemon juice. Brush the mixture over both sides of the cod fillets.
- For the romesco sauce, combine roasted red peppers, almonds, garlic, parsley, red wine vinegar, smoked paprika, cayenne pepper (if using), and salt in a food processor. Blend until smooth.
- With the food processor running, slowly drizzle in the olive oil until the sauce is well combined and creamy. Adjust seasoning if necessary.
- Place the cod fillets on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.
- Remove the cod from the grill and let it rest for a couple of minutes.
- Serve the grilled cod topped with a generous spoonful of romesco sauce.
Notes
- For added flavor, marinate the cod in the olive oil mixture for 30 minutes before grilling.
- Substitute the almonds with walnuts or pine nuts for a different nutty flavor in the romesco sauce.
