  • 1 cup pureed pink dragon fruit (about 1 large dragon fruit)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • Fresh dragon fruit slices (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.
  3. Add the softened butter, whole milk, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until smooth.
  4. Gently fold in the pureed pink dragon fruit until evenly incorporated.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
