Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup raspberry puree (fresh or frozen raspberries blended and strained)
  • 1 tablespoon lemon juice
  • 1 teaspoon red food coloring (optional)

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add 1 cup of sugar and continue to beat until well combined. Mix in the vanilla extract.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Add the sour cream, raspberry puree, lemon juice, and red food coloring if using. Mix until the batter is smooth and evenly colored.
  8. Pour the cheesecake batter over the cooled crust in the springform pan. Smooth the top with a spatula.
  9. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour.
  11. After cooling, refrigerate the cheesecake for at least 4 hours or overnight to set completely.
  12. Once set, carefully remove the sides of the springform pan. Slice and serve chilled, optionally garnished with fresh raspberries or whipped cream.
