Ingredients
- 4 pieces cube steak (about 1 lb, tenderized)
- 1 ½ cups all-purpose flour (for dredging and gravy)
- 2 large eggs (for the coating)
- 1 cup milk (used for coating and gravy)
- Salt and black pepper, to taste (for seasoning)
- About 1 cup vegetable or canola oil (for frying)
Instructions
- Prepare the Cube Steaks
- Season both sides of the cube steaks generously with salt and pepper. Let rest while setting up the dredging station.
- Set Up the Dredging Station
- In one bowl, combine the flour with additional salt and pepper (add garlic powder or paprika for extra flavor if desired).
- In a second bowl, whisk together the eggs and milk until smooth.
- Dredge the Steaks
- Coat each cube steak in the flour mixture, pressing firmly to ensure an even layer.
- Dip the steak into the egg mixture, letting any excess drip off.
- Coat the steak again in the flour mixture, pressing gently to create a thick, crispy coating.
- Fry the Steaks
- Heat about ½ inch of oil in a large skillet over medium heat until shimmering.
- Carefully add the steaks to the skillet, ensuring not to overcrowd.
- Fry for 2–3 minutes per side, or until golden brown and crispy.
- Remove and place on a plate lined with paper towels to drain excess oil.
- Make the Gravy
- Pour off most of the oil from the skillet, leaving about 2 tablespoons behind.
- Stir in 3 tablespoons of flour and cook over medium heat for 1–2 minutes, whisking constantly.
- Gradually add the milk while whisking to prevent lumps.
- Cook until the gravy thickens, then season with salt and pepper to taste.
- Serve
- Plate each steak and generously ladle the gravy over the top.
- Serve with classic sides like mashed potatoes or biscuits for a hearty meal.
