Instructions
Step 1: Prepare the Cookie Dough
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg, pumpkin puree, and vanilla extract. Mix until fully combined.
- In a separate bowl, whisk together the flour, pumpkin spice mix, ground cinnamon, baking powder, and salt.

Step 2: Bake the Cookies
