Ingredients: 

  • 3 potatoes 
  • 1 onion, chopped 
  • Olive oil 
  • 1 carrot, grated 
  • 2 eggs 
  • 1 glass of milk (200 ml) 
  • 80g flour 
  • 2-3 tbsp olive oil 
  • Salt, to taste 
  • Ground black pepper, to taste 
  • Chives, chopped 
  • 2 tomatoes, sliced 
  • 100g cheese, grated 
  • Parsley, chopped 

Instructions: 

Preparing the Potato Base: 

  1. Grate the Potatoes: 
  • Peel and grate the potatoes. Place them in a bowl of cold water to prevent browning. After a few minutes, drain and squeeze out any excess water. 
  1. Prepare the Veggies: 
  • In a pan, heat a little olive oil over medium heat. Place the chopped onion into the pan and cook until it becomes translucent. 
  • Add the grated carrot and cook for another 2-3 minutes until softened. 

Making the Batter: 

  1. Mix the Ingredients: 
  • In a spacious bowl, combine the eggs with milk and whisk thoroughly. Gradually incorporate the flour, whisking continuously to ensure a smooth mixture without lumps. 
  • Stir in the grated potatoes, sautéed onion, and carrot. Season with salt and freshly ground black pepper to suit your taste. 

Cooking the Potato Dish: 

  1. Heat the Pan: 
  • Warm 2-3 tablespoons of olive oil in a large skillet over medium heat.

  • Spread the potato mixture evenly in the skillet after pouring it in. Cook until the underside turns golden brown and crispy, approximately 5-7 minutes.
