Ingredients
- 200 g (7.1 oz) puff pastry
- 4 apples
- 20 g (0.7 oz) butter
- 10 g (0.4 oz) cinnamon
- 30 g (1.1 oz) brown sugar
- 200 g (7.1 oz) granulated sugar
- 100 ml (3.4 fl oz) water
- 20 ml (0.7 fl oz) lemon juice
- 7 g (0.2 oz) salt
- 200 ml (6.8 fl oz) whipping cream
- 80 g (2.8 oz) powdered sugar
- 300 g (11 oz) additional whipping cream for garnish
Instructions
Prepare the Apples
- Peel and core the apples, then slice them thinly to ensure even cooking.
- In a large skillet, melt the butter over medium heat.
- Add the apple slices, cinnamon, and brown sugar. Stir well to coat the apples evenly.
- Cook for 5–7 minutes until the apples are soft and caramelized. Set aside.
Make the Caramel Sauce
- In a separate saucepan, combine granulated sugar, water, lemon juice, and salt.
- Heat over medium-high heat, stirring until the sugar dissolves.
- Stop stirring and let the mixture cook until it turns a golden caramel color. Remove from heat and allow it to cool slightly.
Prepare the Puff Pastry
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface and flatten it slightly with a rolling pin.
- Cut the puff pastry into squares or rectangles, depending on your desired serving size.
- Place the cut puff pastry pieces on a baking sheet lined with parchment paper.
Assemble and Bake
- Place a spoonful of the caramelized apple mixture in the center of each puff pastry square.
- Drizzle a small amount of the prepared caramel sauce over the apples for added flavor.
- Bake the puff pastry squares in the preheated oven for 10–12 minutes, or until the pastry is golden and puffed.
Whip the Cream
- In a chilled mixing bowl, add the whipping cream and powdered sugar.
- Use an electric mixer to beat the cream until soft peaks form.
- If desired, whip additional cream for garnishing.
Serve and Garnish
- Remove the puff pastries from the oven and let them cool slightly.
- Add a dollop of whipped cream on top of each pastry.
- Garnish with extra caramel sauce, additional whipped cream, or a sprinkle of cinnamon. Serve warm and enjoy!
Notes
- Use Tart Apples: Varieties like Granny Smith or Honeycrisp balance the sweetness of the caramel perfectly.
- Puff Pastry Handling: Keep the puff pastry cold before baking to ensure it puffs up properly in the oven.
- Caramel Sauce Tip: Avoid stirring the caramel sauce once it starts to bubble, as this can cause crystallization.
- Make Ahead: You can prepare the apples and caramel sauce in advance for quicker assembly.
